White Chocolate Raspberry Cheesecake Cookies ~ Copycat Subway cookies but even better! Now You Can Make Your Favorite Cookie at Home!
Ok you need to RUSH to the store to get these ingredients for these White Chocolate Raspberry Cheesecake Cookies. Don’t wait the months after finding this recipe to make them.
These babies are to die for. They taste just like Subway’s White Chocolate Raspberry Cheesecake Cookies but they stay soft for days. Subways…well they don’t so much. So see homemade is better!
I made a double batch of these because I just had one of those feelings. You know how I finally made these or why? Well my sis-in-law had been asking me to find a recipe like Subway’s cookies so I found it…and then it collected dust until my nephew texted me one night at 9 pm asking for cookies. I had to inform him it was almost my bedtime so those cookies would have to wait a night. I’m old ok?
Then he told Grandma the next day that I was making him these cookies and well he thought it was for my blog obviously. Duh. Got that nephew trained. So I went home, found out I was out of cream cheese, my dear neighbor rescued me, she got a plate of cookies, the nephew got a plate, I brought some to work, I brought some to a fundraiser.
You know what happened? People posted on FB about these cookies they were that amazing. Oooh and aaahing and saying they were going to steal them. One coworker had 4 then Snapchatted me pouting because I snatched the container when I went home.
Another time I made these I brought them to an old co-worked at a car dealership. Apparently his wife LOVES these White Chocolate Raspberry Cookies at Subway and he made her day when he brought some home. I’m glad I can help husband’s win brownie points with their wives!
So here’s the moral of the story. MAKE THESE NOW. Ok?

I made these but had an issue with crumbling. I followed the directions exactly as given. I loved these cookies but they won’t stay together. Any help with this would be greatly appreciated!

I’ve made multiple batches of these and never had that happen. Did you use the correct brand of muffin mix?
Chasity Moreland says
Can you leave the dough in the refrigerator over night?
Julie Evink says
That should be fine.

Love this recipe I have been making these for a while now but using the blueberry mix. This year i am going to try the apple cinnamon mix
Kristin Schroeder says
Excellent cookies, be sure to let them fully cool before moving or eating as they will fall apart a little (I made bigger ones). As an avid lover of the subway cookies, these were very comparable even with my limited baking skills and evenness of the baking in my oven.
I couldn’t find the raspberry muffin mix from jiffy. I used the triple berry muffin mix from Betty Crocker and got amazing results.
Julie Evink says
So glad you enjoyed them Kristin! Great tip on the other muffin mix!

Hey Julie, These are Now my favorite cookies from Subway! I made a batch yesterday for my Dad for Father’s Day. They tasted great! Mom & Dad loved them! The only thing is that they turned out really thick. More like a scone. I followed your recipe exactly. I don’t know why they got so thick? Any ideas or suggestions? Thank you
Julie Evink says
I’m sorry I’m not sure why that would happen! Did you chill the dough?
Leah says
Do you have to make the muffin mix batter separate? Or can you just add the powder of the muffin mix into the batter for the cookies?
Julie Evink says
Just dump the powder mix in!

Took me a while to find the Jiffy Raspberry Muffin Mix, but I finally did! Called/checked several local grocery stores and either they’d never even heard of it, or didn’t carry it. Thinking I would have to pay an arm and a leg for it on Amazon, I decided to check he Jiffy website. Glad I did; it has a product finder so you can use it to search local stores for specific Jiffy products. This could help someone unsure where to find the mix.
Quick question…because of the cream cheese in them, should these cookies be refrigerated or are they okay to be left on the counter? Making them tomorrow and I’d prefer NOT to make anyone sick! 😀
Julie Evink says
Nope I leave mine out 🙂

Hi! I was so excited to come across this recipe because my husband LOVES those subway cookies! I wanted to make him a giant cookie for father’s day and have our son decorate it – do you have any tips or modifications in order to make sure it comes out ok in a large heart form? Thanks so much!
Julie Evink says
I’m so sorry I missed this! Did you try it?
Kim says
I made this yesterday and it turned out perfect! The first batch was a bit crunchy since I left it in for 13-14 min (wasn’t sure it was cooked all the way), but the second batch was just right at 12 min. Thanks for sharing! 🙂
Julie Evink says
So glad you enjoyed them Kim!
Lisa Tiessen says
I don’t have shortening, is there a substitute I can use? Oil? Margarine?
Julie Evink says
If you substitute the shortening you will alter the texture of the cookie and it will more than likely end up spreading more and being a crisp cookie.
shantel says
Mine came out like pancakes with pocks ): help!
Paige says
Was this using salted butter or unsalted? Will one or the other change how the cookies turn out in terms of softness/taste/etc.?
Julie Evink says
I used salted butter! I have not tested it with unsalted butter.
