White Chocolate Raspberry Cheesecake Cookies ~ Copycat Subway cookies but even better! Now You Can Make Your Favorite Cookie at Home!
Ok you need to RUSH to the store to get these ingredients for these White Chocolate Raspberry Cheesecake Cookies. Don’t wait the months after finding this recipe to make them.
These babies are to die for. They taste just like Subway’s White Chocolate Raspberry Cheesecake Cookies but they stay soft for days. Subways…well they don’t so much. So see homemade is better!
I made a double batch of these because I just had one of those feelings. You know how I finally made these or why? Well my sis-in-law had been asking me to find a recipe like Subway’s cookies so I found it…and then it collected dust until my nephew texted me one night at 9 pm asking for cookies. I had to inform him it was almost my bedtime so those cookies would have to wait a night. I’m old ok?
Then he told Grandma the next day that I was making him these cookies and well he thought it was for my blog obviously. Duh. Got that nephew trained. So I went home, found out I was out of cream cheese, my dear neighbor rescued me, she got a plate of cookies, the nephew got a plate, I brought some to work, I brought some to a fundraiser.
You know what happened? People posted on FB about these cookies they were that amazing. Oooh and aaahing and saying they were going to steal them. One coworker had 4 then Snapchatted me pouting because I snatched the container when I went home.
Another time I made these I brought them to an old co-worked at a car dealership. Apparently his wife LOVES these White Chocolate Raspberry Cookies at Subway and he made her day when he brought some home. I’m glad I can help husband’s win brownie points with their wives!
So here’s the moral of the story. MAKE THESE NOW. Ok?
White Chocolate Raspberry Cookie Ingredients

I noticed the video shows 1/2 cup butter flavored shortening but the actual recipe calls for 1/2 cup butter. Which one should I follow? Looking forward to making these!!! They look amazing!
Julie Evink says
You can use either! I prefer the way with the butter after testing 🙂
Steph says
Am I supposed to use both 1/2 c. butter softened and 2 Tbsp shortening? Or am I supposed to use one or the other?
Julie Evink says
Both!
Pat says
You used butter instead of buttered shortening
Tiffany says
I haven’t made any yet… Is that unsalted butter?
Julie Evink says
I used salted!
Christina Z says
Is shortening required or can I use the same amount of butter?
Julie Evink says
You can use butter, I’ve tested it that way too but preferred the outcome with shortening.
Tosha says
Hi. Can I use butter flavored shortening? I thought I had regular shortening but I only have butter flavored
Julie Evink says
Yes butter flavored is great for this recipe!
Carol says
Just made them…..DELICIOUS!

So glad you enjoyed them!

I made these yesterday, doubling the recipe, except for the chocolate chips, which I only 2 C of, rather than 3. The flavor was amazing but even with less than the correct amount of chocolate chips, it was way too many for mine liking. I would use 1 1/2 C total when doubling. Just my thoughts! Thanks for the amazing recipe!

Hi Julie. I have made these super cookies several times but never printed off the recipe. I noticed this time that you changed the butter to butter flavored shortening. I would rather cook w butter (plus these cookies were wonderful ) so could you tell me if the amounts are the same?
Thanks so much
Julie Evink says
It was 1/2 c. butter

Can you use butter in place of the butter tasting shortening? Thanks
Brenda says
Made these for the first time today. So far so good. Will let you know how they taste, etc….
My question for you Julie is, can the cookies be frozen, and still be good when thawed?
P.S. I found the Raspberry Muffin Mixes on Amazon – 6 packages.

I just made these with a couple of changes. I used a stick of butter. Then swapped oat flour for the regular flour. I then used parchment paper lined 9×13 glass pan baking for 25 minutes. They were amazing!?

So glad you enjoyed them Kristi!
