White Chocolate Raspberry Cheesecake Cookies ~ Copycat Subway cookies but even better! Now You Can Make Your Favorite Cookie at Home!
Ok you need to RUSH to the store to get these ingredients for these White Chocolate Raspberry Cheesecake Cookies. Don’t wait the months after finding this recipe to make them.
These babies are to die for. They taste just like Subway’s White Chocolate Raspberry Cheesecake Cookies but they stay soft for days. Subways…well they don’t so much. So see homemade is better!
I made a double batch of these because I just had one of those feelings. You know how I finally made these or why? Well my sis-in-law had been asking me to find a recipe like Subway’s cookies so I found it…and then it collected dust until my nephew texted me one night at 9 pm asking for cookies. I had to inform him it was almost my bedtime so those cookies would have to wait a night. I’m old ok?
Then he told Grandma the next day that I was making him these cookies and well he thought it was for my blog obviously. Duh. Got that nephew trained. So I went home, found out I was out of cream cheese, my dear neighbor rescued me, she got a plate of cookies, the nephew got a plate, I brought some to work, I brought some to a fundraiser.
You know what happened? People posted on FB about these cookies they were that amazing. Oooh and aaahing and saying they were going to steal them. One coworker had 4 then Snapchatted me pouting because I snatched the container when I went home.
Another time I made these I brought them to an old co-worked at a car dealership. Apparently his wife LOVES these White Chocolate Raspberry Cookies at Subway and he made her day when he brought some home. I’m glad I can help husband’s win brownie points with their wives!
So here’s the moral of the story. MAKE THESE NOW. Ok?

I need to make 4 batches of these which would require 8 eggs all together. I only have 5 eggs on hand. Is there anything I can use substitute the remaining eggs with?
Julie says
Hi Natasha – there are some alternatives for replacing one egg in recipes but I think it would be hard to substitute anything for 3 eggs. Sorry!
Melanie says
Do they need to be refrigerated
Julie Evink says
No

These cookies are very tasty, but really don’t compare to Subway. The raspberry Jiffy mix wasn’t available at my store, so I substituted it with triple berry muffin mix. They have more of a muffin texture vs cookies. They’re definitely worth making.

These are sooooo yummy ?
Mine turned out a bit fluffy, almost like a scone but that didn’t stop my husband and I from eating the entire batch in one day ???♀️. Very tasty and easy to make. Making more today!
Julie Evink says
They do have a slightly different texture due to the muffin mix! Glad you enjoyed them. Thanks for commenting/rating!

Can’t wait to make this

Hi!
Can the Jiffy raspberry muffin mix be replaced with a homemade one? I’ve been on a mission to make everything from scratch myself so i was wondering if anyone has any tips for replacing the Jiffy mix here!
Julie Evink says
I’m sorry I’ve never tried it and I can’t see that anyone mentioned in comments they had either!
Linda says
Making them for the 2nd time. They are wonderful. My son thought they came from Subway! Thanks!

I picked out this receipe the way I do all others..I look at the picture to see if its appealing, I check star ratings, then read previous comments, I chose this one and I’m so happy I did. These cookies are delicious! And yes..just like the Subway ones once you get passed the idea that you made them with muffin mix then yes, they taste just like cookies. However, the only downfall was locating the Jiffy raspberry mix which is not avaiable in southern california so I used 2 pkgs. Of triple berry muffin mix from Betty Crocker and it was perfect! Thanks so much for this awesome receipe. Super yummy & easy!!
Julie Evink says
It is super hard to find and that’s such a downfall I agree! Good to know the berry muffin mix works 🙂

Julie Evink says
Oh great to know this! So glad you enjoyed them!

I used strawberry cheese cake muffin mix and left out the white chocolate chips. I left them out because I don’t like things really sweet. They turned out great! Just sweet enough for me! Thanks for the idea!
Julie Evink says
So glad you could make them for your taste buds 🙂
Katie says
Do you freeze them after you bake or freeze the dough?
Julie Evink says
You could do either. I like to freeze the dough balls and then I always can have them “fresh baked” when I get a craving!
Ladylass says
Love this recipe! I doubled it for my hubs work. I had to order the strawberry muffin mix from Amazom. I used all the white chips they said to. Used half butter and half Crisco. Loved them.
Julie Evink says
So glad you enjoyed it! Thanks for coming back to leave a comment 🙂
