Notes

Can I Make Fruit Pizza The Day Before?
If you want to get a head start, you can make parts of this recipe a day in advance!
You can make and bake the crust and then cool it to room temperature. Cover it tightly with plastic wrap and store it in the refrigerator overnight.
You can also make the frosting a day ahead and store it in an airtight container in the refrigerator.
Wait to frost and decorate the pizza until the next day. This will ensure your pizza doesn’t get soggy.
How Do You Keep The Cookie Crust From Getting Soggy?
Wait to add the frosting and fruit until you are ready to serve the fruit pizza. Also, be sure to pat the fruit dry and avoid using fruit that is really watery.
Can You Use Refrigerated Cookie Dough Instead Of Homemade?
Yes, I’ve tested this recipe with premade dough and it works well. I use dough that is already portioned into 24 cookie dough balls – just press them into the pan to make one unified crust.
If you use the prepared dough, reduce the baking time to about 10 minutes. The crust won’t be as thick as the homemade one but it will work fine.
How Long Do Leftovers Keep?
They will keep for a couple of days in the refrigerator but keep in mind the crust will soften and the fruit will make it soggy. So, the crust may fall apart on you but it will still taste good!
