Crescent Roll Breakfast Casserole

Easy Crescent Roll Breakfast Casserole has a crescent roll crust topped with sausage, cheese and eggs. It's a great breakfast or brunch recipe that can be made ahead.

Ingredients

  • 1 pound pork sausage
  • ½ cup diced yellow onion
  • 1 8 ounces can Pillsbury crescent rolls or 1 can crescent dough sheet
  • 10 eggs
  • ½ cup milk
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup Mozzarella cheese shredded
  • 2 cups cheddar cheese shredded, divided

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Grease a 9 x 13 inch baking dish with cooking spray or butter.
  • If you are using crescent rolls unroll them and place side-by-side in the baking dish, pressing seams together to seal. If you are using a crescent dough sheet, unroll and place in a baking dish stretching if needed to cover the entire bottom of the dish. Set aside.
  • In a skillet brown pork sausage and onion until no longer pink. Drain off any excess grease.
  • While the sausage is cooking, combine eggs, milk, pepper and salt in a mixing bowl. Whisk to combine. Add Mozzarella cheese and one cup of cheddar cheese, stir to combine.
  • Sprinkle cooked sausage mixture over the top of crescent roll dough in the baking dish. Then pour the egg mixture on top. Sprinkle the remaining 1 cup of cheddar cheese.
  • Place in a preheated oven at 350 degrees Fahrenheit and bake for 35-45 minutes or until a knife inserted in the center comes out clean.

Notes

  • FRIDGE: Leftover casserole can be stored in the fridge in an airtight container for up to 3 days.
  • FREEZER: To freeze this casserole, either wrap it well or place the leftover into an airtight container. It will freeze for up to 2 months.
  • Use crumbled cooked bacon or even cooked chunks of ham to mix up the flavors. You can also add chopped fresh vegetables to the casserole.
