Mashed Cauliflower

Mashed Cauliflower ~ the perfect side to any meal!

Ingredients

  • 1 head cauliflower cut into florets
  • 3 garlic cloves minced
  • 2 15.5 oz cans chicken broth

Instructions

  • Put cauliflower and chicken broth into a large saucepan. Bring to a boil and simmer for approximately 12 minutes or until cauliflower is tender.
  • Drain cauliflower, reserve a few tablespoons of liquid.
  • Transfer cauliflower to food processor and process until it is smooth. If it is to thick add some of reserved liquid mixture.
  • Serve warm.
