Cool Whip Cookies

The perfect blend of light, fluffy and chewy. These Cool Whip Cookies melt in your mouth.

Ingredients

  • 15.25 ounces box cake mix we used strawberry and lemon
  • 8 ounces Lite Cool Whip
  • 1 egg
  • ½ c. powdered sugar

Instructions

  • In a mixing bowl combine Cool Whip and eggs. Mix well. Add in cake mix and mix until combined.
  • Refrigerate cookie dough for 1/2 hour.
  • Preheat oven to 350 degrees.
  • Remove dough from fridge. Using a cookie scoop make cookies, rolling in powdered sugar and placing on a cookie sheet lined with a Silpat or parchment paper. Bake for 10-12 minutes.
  • Cool for 5 minutes on pan and then remove to wire rack. Store in refrigerator.

Notes

What Can You Add To Cool Whip Cookies?
  • White chocolate chips: These would work great with lemon, strawberry, and other fruit flavored cake mixes.
  • Chocolate chips: If you try chocolate cookies, mix in some chocolate chips or chocolate chunks!
  • Other baking chips: Butterscotch chips, Butterfinger Bits, Toffee bits… check out the baking aisle for even more ideas.
  • Candy: M&Ms, jelly beans, Reese’s pieces, Andes candies, chopped peanut butter cups, or other candy you like in cookies will work, too. Mix and match them with different flavored cake mixes!

  • Birthdays: Use funfetti cake mix and mix in some extra sprinkles for a fun birthday party treat.
  • Christmas: Red velvet cake mix is perfect for the holiday season!
  • Halloween: Use chocolate cake mix and add some Halloween M&Ms
  • 4th of July: White cake mix plus patriotic sprinkles would make fun Cool Whip cookies.
  • Easter: Lemon cake mix with white chocolate chips would be a great combo.
How To Store Cool Whip Cookies
Room Temperature: Store the cooled Cool Whip cookies in an airtight container and they will keep well for several days.
How to Freeze the Dough: You can freeze the cookie dough to bake later! Scoop the dough and place the dough balls on a sheet pan lined with parchment. Freeze them for an hour and then store them in a freezer container. Thaw them at room temperature before baking them.
How to Freeze Cool Whip Cookies: Store the cooled cookies in a freezer bag or container. They will keep in the freezer for up to two months.
