Texan Tacos

Texas Tacos ~ Tacos are taken over the top when they are stuffed full of taco meat, tomatoes, corn, red pepper and rice!

Ingredients

  • 1 1/2 lbs ground beef
  • 1 medium sweet pepper chopped
  • 1 small onion chopped
  • 1 14.5 oz can diced tomatoes, drained
  • 1 1/3 c. frozen corn thawed
  • 1 8 oz can tomato sauce
  • 2 Tbsp chili powder
  • 1/2 tsp salt
  • 1 8.8 oz ready to serve brown rice
  • 20 taco shells

Optional toppings

  • Tomatoes
  • Shredded Lettuce
  • Sour Cream

Instructions

  • In a large skillet cook ground beef, red peppers, and onion over medium heat until beef is cooked through and no longer pink. Drain grease.
  • Mix in tomatoes, corn, tomato sauce, chili powder and salt. Bring to a boil and then add rice. Heat mixture through. Serve in taco shells and top as desired.
