- 1 1/2 c. all-purpose flour
- 1/2 c. graham cracker crumbs
- 1/4 c. packed brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 1/2 c. buttermilk
- 1/4 c. vegetable oil
- 3/4 c. semi-sweet chocolate chips
- 1 1/4 c. mini marshmallows divided
Grease a 12 cup muffin tin and set aside.
In a large mixing bowl combine the dry ingredients. In a different bowl combine egg, buttermilk and oil. Mix until combined. Stir wet mixture into dry mixture, just until moistened. Fold in the chocolate chips and mini marshmallows.
Fill greased muffin pan 3/4 full. Sprinkle with marshmallows.
Bake at 375 degrees for 15-18 minutes or until they test done.
Cool five minutes before removing to wire racks.
