Ingredients

Nachos

  • 1 18 oz Bag Tortilla Chips
  • 1/2 c. corn
  • 1 15 oz can black beans, rinsed
  • 1 to mato diced
  • 1/2 c. diced red pepper
  • 1/4 c. diced green onion
  • 2 Tbsp chopped cilantro

Chipotle Sauce

  • 1 Chipotle in Adobo Sauce
  • 1/4 c. unsweetened Silk Cashew Milk
  • 2/3 c. mayonnaise
  • 2 cloves garlic minced

Instructions

  • Spread tortillas out on baking sheet or large platter. Top with the rest of ingredients.
  • To make the Chipotle sauce mix all ingredients in blender container. Puree until smooth. Drizzle over nachos.
