- 1 lb. penne pasta
- 2 boneless chicken breasts sliced
- season with salt & pepper on both sides
- 4 oz. cream cheese softened
- 3/4 cup pasta cooking liquid
- 1/2 cup sun dried tomatoes sliced
- 1/4 cup fresh lemon juice about 2 lemons
- 1 tablespoon lemon zest
- 2 garlic cloves minced
- 2 tablespoons fresh basil thinly sliced
- salt & pepper to taste
Preheat grill to medium high heat.
Season both sides of chicken with salt and pepper.
Place chicken on the grill and grill each side for 5-7 minutes, until no longer pink. Remove from grill and set aside.
Bring a pot of water to a boil, add penne pasta. Cook until al dente according to package instructions. (about 8-10 minutes)
Drain all but 3/4 cup of pasta cooking liquid.
To a large bowl add pasta, sliced chicken breasts, cream cream, cooking liquid, sun dried tomatoes, lemon juice, lemon zest, garlic cloves, basil, salt, and pepper to taste.
Toss to mix until cream cheese is melted.
Serve.
