Creamy Lemon Chicken Pasta with Sun Dried Tomatoes

Ingredients

  • 1 lb. penne pasta
  • 2 boneless chicken breasts sliced
  • season with salt & pepper on both sides
  • 4 oz. cream cheese softened
  • 3/4 cup pasta cooking liquid
  • 1/2 cup sun dried tomatoes sliced
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 tablespoon lemon zest
  • 2 garlic cloves minced
  • 2 tablespoons fresh basil thinly sliced
  • salt & pepper to taste

Instructions

  • Preheat grill to medium high heat.
  • Season both sides of chicken with salt and pepper.
  • Place chicken on the grill and grill each side for 5-7 minutes, until no longer pink. Remove from grill and set aside.
  • Bring a pot of water to a boil, add penne pasta. Cook until al dente according to package instructions. (about 8-10 minutes)
  • Drain all but 3/4 cup of pasta cooking liquid.
  • To a large bowl add pasta, sliced chicken breasts, cream cream, cooking liquid, sun dried tomatoes, lemon juice, lemon zest, garlic cloves, basil, salt, and pepper to taste.
  • Toss to mix until cream cheese is melted.
  • Serve.
