Cajun Shrimp Boil Foil Packets

Ingredients

  • 4 red potatoes diced
  • 2 6 oz each salmon fillets, cut crosswise in half
  • 1 lb uncooked shrimp peeled and deveined
  • 1/2 lb summer sausage diced
  • 2 ears sweet corn cut in half
  • 2 Tbsp olive oil
  • 1 tsp cajun seasoning
  • 1/4 tsp pepper
  • 1 medium lemon cut into four wedges

Instructions

  • Cut four pieces of heavy duty foil about 18 in x 12 in.
  • Divide potatoes, salmon, shrimp, sausage and corn between the four pieces of foil. Drizzle with oil; sprinkle with seasonings. Squeeze lemon juice over top then place squeezed wedges in packets. Foil foil around mixture and seal tightly.
  • Grill, covered, over medium heat for 12-15 minutes or until fish just begins to flake easily with forks, shrimp turn pink and potatoes are tender. Open foil packets carefully to allow steam to escape.
