Overnight Caramel Apple French Toast Casserole

Ingredients

  • 1 loaf sourdough bread tore into pieces
  • 1 21 oz can Lucky Leaf apple pie filling
  • 8 eggs
  • 2 1/2 c. milk
  • 1/2 c. heavy whipping cream
  • 2 c. spice cake mix
  • 1 tsp cinnamon
  • 2 tsp vanilla extract

Topping

  • 1/2 c. all-purpose flour
  • 1/2 c. firmly packed brown sugar
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 c. butter

Caramel Sauce

  • 1/2 c. butter
  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 1/2 c. whipping cream
  • 1 1/3 c. powdered sugar
  • 2 tsp vanilla extract

Instructions

  • Spray a 9x13" glass baking dish with non-stick spray.
  • Layer half of bread in baking dish. Spread apple pie filling over bread. Top with remaining bread.
  • Whisk together eggs, milk, heaving whipping cream, cake mix, cinnamon and vanilla extract in a large bowl. Pour mixture over bread.
  • Cover baking dish and store in the fridge overnight or for several hours.
  • In a small bowl add flour, brown sugar, cinnamon and salt, stir until combined. Cut butter into mixture. Store in fridge overnight and several hours.
  • Preheat oven to 350 degrees.
  • Remove french toast casserole from fridge, uncover and drop topping by the spoonful randomly across french toast casserole.
  • Bake for 1 hour until the center is set and edges are browned.
  • Prepare caramel sauce half way through french toast baking. In a small saucepan combine butter, sugars and cream in saucepan. Cook over medium heat until sugar is dissolved.
  • Cool for 20 minutes.
  • Stir in powdered sugar and vanilla until smooth. Top casserole with caramel sauce
