Ingredients

Tacos

  • 1 18 oz box SeaPak Popcorn Shrimp
  • 8 taco shells soft

Corn Salsa

  • 1 15.25 oz can corn
  • 1 large tomato diced
  • 1 Tbsp green onion minced
  • 2 Tbsp cilantro. chopped
  • 1/2 Tbsp extra virgin olive oil
  • 2 Tbsp lime juice
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp ground Ancho Chile Pepper

Cilantro Lime Sauce

  • 3/4 c. light sour cream
  • 1 Tbsp cilantro chopped
  • 1 Tbsp lime juice
  • 1/4 tsp ground black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder

Instructions

  • Prepare SeaPak Popcorn shrimp according to package directions.
  • Combine all ingredients for salsa in a small bowl and refrigerate.
  • Combine all ingredients for cilantro lime sauce in small bowl and refrigerate.
  • Divide shrimp among taco shells. Top each with salsa and cilantro lime sauce.
