Tacos
- 1 18 oz box SeaPak Popcorn Shrimp
- 8 taco shells soft
Corn Salsa
- 1 15.25 oz can corn
- 1 large tomato diced
- 1 Tbsp green onion minced
- 2 Tbsp cilantro. chopped
- 1/2 Tbsp extra virgin olive oil
- 2 Tbsp lime juice
- 1/4 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp ground Ancho Chile Pepper
Cilantro Lime Sauce
- 3/4 c. light sour cream
- 1 Tbsp cilantro chopped
- 1 Tbsp lime juice
- 1/4 tsp ground black pepper
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
Prepare SeaPak Popcorn shrimp according to package directions.
Combine all ingredients for salsa in a small bowl and refrigerate.
Combine all ingredients for cilantro lime sauce in small bowl and refrigerate.
Divide shrimp among taco shells. Top each with salsa and cilantro lime sauce.
