Ingredients

  • 1 lb Simply Made Garlic Mashed Potatoes
  • 1/2 c. real bacon bits
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 c. Colby-Monterey Jack cheese shredded, divided

Instructions

  • Preheat oven to 350 degrees.
  • Warm mashed potatoes in microwave until easy to stir. In a large bowl combine the potatoes, salt, pepper, bacon bits and 1 c. shredded cheese.
  • Grease 10 muffin cups. Divide potato mixture between muffin cups and sprinkle with remaining cheese.
  • Bake 15-20 minutes or until golden brown around the edges. Let cool 5 minutes. Remove from pan.
