Candied Pecan & Apple Wedge Salad

- 1/2 head of iceberg lettuce cut into two wedges
- 4 strips of bacon cooked and chopped
- 1/2 green apple peeled and shredded
- 1 roma tomato finely chopped
- 1 small cucumber peeled and finely chopped
- 4 tbsp candied pecans see below
- 1-2 tbsp shredded cheddar cheese optional
- 3-4 tsp ranch dressing per wedge
Candied Pecans
- 1 cup chopped pecans
- 1 heaping tbsp light brown sugar
- a pinch of kosher salt
- 1/4 tsp vanilla
- 1/2 tsp water
Top each wedge with ranch dressing.
Sprinkle on bacon, tomatoes, cucumbers, shredded apple, cheese(optional), and candied pecans. Serve.
Candied Pecans:
In a small bowl, mix brown sugar, salt, vanilla, and water.
Heat pecans in a small sauce pan over medium heat a few minutes. Remove from heat.
Add sugar mixture to pecans and stir to evenly coat pecans.
Pour out onto wax paper to cool and dry.
