Ingredients

  • 2 Tbsp sesame oil divided
  • 1 lb boneless skinless chicken breasts cut into 1'' pieces
  • 2 c. peas and carrots frozen
  • 2 cloves garlic
  • 2 eggs beaten
  • 2 Tbsp soy sauce low sodium
  • 1 head cauliflower riced
  • 1 green onion minced

Instructions

  • Heat 1 Tbsp sesame oil over medium low heat. Add chicken, garlic and carrots and peas. Cook until chicken is cooked through and carrots and peas are tender.
  • Add the rest of the sesame oil and rice cauliflower. Stir fry. Watch this carefully so the cauliflower does not get mushy.
  • Make well in the middle of the cauliflower mixture. Turn heat down and add eggs. Stir gently until eggs are fluffy and cooked. Stir in soy sauce.
  • Top with green onions and serve immediately.

Notes

I sometimes add 1 c. prepared brown rice to this to have the "real" rice in there for texture. Just add this with the rice cauliflower. If you are not on a true low carb diet this helps beef this meal up a little!
