Instant Pot Pork Loin

Tender, juicy pork loin that is seasoned, seared and prepared in your pressure cooker! A delicious dinner recipe that's quick enough for busy weeknights!

Ingredients

  • 2 lb pork loin roast boneless
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 tsp smoked paprika
  • ½ c. vegetable broth

Instructions

  • In a small bowl combine the garlic powder, onion powder, salt, black pepper and smoked paprika. Season the entire pork roast with spice mixture.
  • Set Instant Pot to Saute. When setting reads HOT, add oil.
  • Add pork and brown on all sides, about two minutes per side.
  • Cancel Saute setting on Instant Pot.
  • Add vegetable broth to Instant Pot and scrape anything that’s on the bottom of the pot from sauteing the meat to prevent burn warning.
  • Add pork to Instant Pot, fat side up. Close the lid with the pressure vent closed and set Instant Pot to manual for 20 minutes.
  • When time is up let the Instant Pot natural release for 5 minutes then manually release any more pressure.
  • Open lid, remove pork and set on cutting board. Check to make the internal temperature is 145 degrees F. Let pork loin rest for additional 3 minutes.
  • Slice into 3/4'' - 1'' pieces and serve.

Notes

  • Cook it fat side up. 
  • Pork is "done" at 145 degrees F. Do not over cook it or it will be dry and chewy.'
  • It is safe to consume pork if it has a pink center as long as it has an internal temperature of 145 degrees F.
    • Medium-Rare – 145 to 150 degrees F.
    • Medium – 150 to 155 degrees F.
    • Medium-Well – 155 to 160 degrees F.
    • Well-Done – 160-165 degrees F.
  • Remember to let the pork rest before slicing into it, so the juices can redistribute and you get the juiciest pork loin ever!
  • Cut the slices thick, about 3/4'' to 1'' slices.
Leftovers - When I have leftovers I store the sliced pork in an airtight container with some of the leftover juice. It keeps well for a few days in the refrigerator. You can also freeze it for up to 3 months.
Reheat - To reheat it, just warm the slices in a pan on the stove over medium heat. Cover the pan with a lid so the meat doesn't try out and just turn it a few times while it warms up. It only takes a couple of minutes!
