Instant Pot Sweet Potatoes

Creamy sweet potatoes that are cooked in your pressure cooker for an easy, healthy side dish.

Ingredients

  • 4 medium-sized sweet potatoes
  • 1 c. of water

Topping Options

  • Whipped cinnamon butter
  • Whipped butter
  • Butter
  • Miniature Marshmallows
  • Pecans chopped
  • Cinnamon

Instructions

  • Rinse and scrub the sweet potatoes.
  • Add the water to the Instant Pot. Place the steaming trivet inside, and lay the potatoes on top, laying the top two across the bottom two.
  • Place the lid on the Instant Pot, making sure the valve is in the sealed position.
  • Use manual mode to set on high-pressure cook for 10-15 minutes, depending on the size of your sweet potato.
  • Allow the pressure cooker to naturally release pressure for 10 minutes when time is done, then manually release any remaining pressure.
  • Carefully remove the lid and remove sweet potatoes. Cut Sweet Potatoes open down the middle.
  • Serve with butter or other toppings of your choice.
  • Leftovers can be refrigerated for up to 5 days

Notes

Topping Ideas
  • You can keep it simple and just add some butter, salt, and pepper. Or, get fancy and top them with light and fluffy whipped butter like they do at restaurants!
  • You can use the same sort of toppings you might for regular potatoes, like sour cream and shredded cheese, too.
  • Add some chopped fresh parsley or chives for some color and fresh flavor.
  • For a special treat, make some whipped cinnamon butter (just whip softened butter with a little cinnamon to make it!)
  • Crunchy chopped nuts like pecans and walnuts are great, too!
  • The kids LOVE some mini marshmallows on theirs – I just put some on top and pop them under the broiler for a few minutes to toast them so their ooey-gooey. It tastes like sweet potato casserole!
