Dorito Casserole

This Nacho Cheese Dorito Casserole is loaded with sour cream, ground beef taco meat, cheese and Doritos for a family favorite dinner!

Ingredients

  • 1 pound ground beef
  • ½ cup onion finely diced
  • 1 packet taco seasoning
  • ½ cup salsa
  • 1 can mild Rotel
  • 1 cup sour cream
  • 1 ½ cup shredded cheddar cheese
  • 9.25 oz bag Nacho Cheese Doritos crushed
  • Toppings: sour cream, cilantro, chopped tomatoes etc.

Instructions

  • Preheat the oven to 375 degrees F. Coat a 2-3 quart baking dish with cooking spray and set aside.
  • Brown the ground beef in a skillet over medium high heat. During the last 2-3 minutes add the onion and cook until onion is translucent and ground beef is cooked through. Drain off any excess beef.
  • Add the taco seasoning to ground beef in the skillet and stir to combine. Then add the salsa and Rotel. Stir to combine and simmer for 3-4 minutes.
  • Remove pan from heat and stir in sour cream until combined.
  • In the prepared baking dish spread ⅓ of the crushed chips over the bottom. Place ½ of the meat mixture on top with another ⅓ of the chips then ⅓ of the cheese in an even layer.
  • Repeat the process with another ⅓ of the chips, rest of the meat and ⅓ of the cheese and then remaining chips.
  • Cover with aluminum foil and bake in a preheated oven at 375 degrees F for 30 minutes, remove foil top with remaining ⅓ of cheese and bake 5-10 minutes or until cheese is melted.
  • Sprinkle the casserole with diced tomatoes and chopped green onions, and serve immediately.
  • Top with any additional taco toppings you desire.

Notes

  • You can assemble this casserole a day ahead and keep it in the fridge. This makes it easy to pop in the oven the next day for dinner! This makes a great meal to share with someone who needs a hot meal, too.
  • Leftover Dorito casserole will keep for three to four days in the refrigerator.
  • I don’t recommend freezing this casserole because the chips will get soggy once it’s thawed.
What Else Can You Add To Taco Casserole?
Instead of ground beef or turkey, you could add cooked shredded chicken! Or, try adding black beans or pinto beans to the beef mixture to make it even more filling.
Can You Use Tortilla Chips Instead Of Doritos?
Yes, regular tortilla chips would work great in this recipe.
Don’t Forget The Toppings!
  • Diced tomatoes, green onions, and cilantro. If you want more heat, add some diced jalapeno peppers!
  • Add a dollop of sour cream or guacamole.
  • Spoon some salsa or pico de gallo over the top.
