Ingredients

  • 1 pound ground pork or beef
  • 2 garlic cloves minced
  • 14 ounces coleslaw mix
  • ¼ cup reduced-sodium soy sauce
  • ½ teaspoon ginger powder
  • 1 egg whisked
  • 1 Tablespoon sesame oil
  • sriracha to taste
  • 2 Tablespoons green onions sliced, optional

Instructions

  • In a large skillet over medium-high heat cook and crumble ground pork or beef. Heat until no longer pink 6-8 minutes; drain off grease. Add garlic to pan and Sautee for 30 seconds.
  • Add the coleslaw mix, soy sauce, and ground ginger to skillet. Sautee until the coleslaw is wilted.
  • Make a well in the center of the skillet and add the egg. Scramble until done over low heat.
  • Drizzle sesame oil over the skillet. Sprinkle with green onions if desired. If you'd like a little heat drizzle sriracha over the top.
  • Serve immediately. We like to serve it with cauliflower rice or rice.

Notes

  • If looking for a low carb option substitute riced cauliflower for rice or serve without rice.
