Caramel Oatmeal Bars

Ooey gooey caramel and chocolate chips on a chewy oatmeal crust make these Caramel Oatmeal Bars amazing!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup old fashioned oatmeal
  • ¾ cup butter melted
  • 1 cup brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 32 caramels
  • cup half & half
  • ½ cup semi-sweet chocolate chips

Instructions

  • Grease a 9x13 inch pan with non-stick spray and set aside. Preheat oven to 325 degrees Fahrenheit.
  • In a stand mixer or large mixing bowl with handheld mixer blend the first 6 ingredients together.
  • Pat oatmeal mixture into prepared pan in an even layer
  • In a saucepan melt caramels in ⅓ cup half & half together on medium heat, stirring frequently. Pour caramel over crumb mixture and sprinkle with chocolate chips.
  • Bake for 20-25 min at 325 degrees Fahrenheit or until crust is just turning golden brown on sides.

Notes

Place leftover bars in an airtight container or Ziploc bag. Store at room temperature for about 4 days or in the fridge for up a week.
Alternatively, you can store leftover bars in the freezer! Wrap the 9×13 pan in plastic wrap or place leftovers into an airtight container. Store in the freezer for up to 3 months. Allow to thaw before eating!
