Light Tex Mex Shrimp Bites Recipe

Ingredients

  • 24 wonton wrappers
  • 2 Tbsp olive oil
  • 24 medium shrimp peeled and deveined
  • 1/2 tsp salt
  • 1 teaspoon chili powder
  • 2 limes juiced
  • Non-Stick Cooking Spray
  • 1/2 c. guacamole
  • 1/2 c. pico de gallo
  • 2 Tbsp chives chopped

Instructions

  • Preheat oven to 350 degrees.
  • Spray wonton wrappers with non-stick cooking spray. Arrange in 24 mini muffin cups. Bake in preheated oven for 5-7 minutes or until edges are just starting to brown. Remove from oven.
  • While wontons are baking toss the shrimp with 1 Tbsp olive oil, salt, lime juice and chili powder. Cook in skillet over medium heat, about 5-7 minutes or until they are opaque throughout.
  • Fill each wonton cup with gaucamole, then pico de gallo and then top with one shrimp. Sprinkle chives on top of shrimp.
