Pumpkin Bars with Cream Cheese Frosting

Ingredients

  • 4 eggs
  • 1 ⅔ cup sugar
  • 1 cup canola oil
  • 15 ounces pumpkin puree
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon salt

Frosting

  • 3 ounces cream cheese softened
  • ½ cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Grease a 10x15 inch baking pan and set aside.
  • In a large mixing bowl beat together eggs, sugar, oil and pumpkin until light and fluffy. Mix in dry ingredients until combined. Spread into prepared baking pan.
  • Bake for 20-25 minutes or until they test done. Cool.
  • For the frosting cream together cream cheese, butter and vanilla until smooth in mixing bowl. Gradually add in powdered sugar and cinnamon while mixing. Spread over cooled bars.
  • Store in airtight container in the refrigerator.

Notes

  • If you don’t plan on serving them right away, I recommend storing the frosted bars in the refrigerator. This will keep the frosting stable.
  • Or, you can bake the bars a day in advance and tightly wrap them in plastic to keep at room temperature. The next day, you can make the frosting and frost them before serving.
  • Store any leftover bars in an airtight container in the refrigerator.
