Cinnamon Frosted Pumpkin Cookies

Ingredients

Cookies

  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 1 egg
  • 1 c. pumpkin
  • 2 1/2 c. flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt

Cinnamon Frosting

  • 1/4 c. butter melted
  • 1/4 c. shortening
  • 1 1/4 c. powdered sugar
  • 1 Tbsp milk
  • 3/4 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl cream together the shortening and sugar. Add rest of the ingredients and mix until combined.
  • Drop by teaspoon onto greased cookie sheet. Baked 10-12 minutes or until edges are golden brown. Let cool on pan 3-5 minutes. Remove to wire rack and let cool.
  • For the frosting cream together butter and shortening in mixing bowl. Slowly mix in the rest of the ingredients. Spread over cooled cookies.
