Cake
- 1 ⅔ c. all-purpose flour
- 1 ½ c. white sugar
- ⅔ c. unsweetened cocoa powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 1 tsp vanilla
- 1 ½ c. buttermilk
- ½ c. butter flavored shortening
- 2 eggs
Frosting
- 1 c. white sugar
- ½ c. unsweetened cocoa powder
- ¼ c. butter
- ¼ c. milk
- dash of salt
- 1 tsp vanilla
Preheat oven to 350 degrees. Grease and flour 9 x 13 inch pan and set aside.
In a mixing bowl beat together all ingredients on low, for 30 seconds, scraping bowl as needed. Continue to beat on high speed for 3 additional minutes. Pour batter into prepared pan.
Bake in preheated oven for 35-40 minutes or until cake tests done (insert toothpick into center and it should be clean when pulled out).
Remove cake from oven and cool.
Meanwhile to prepare frosting, mix all frosting ingredients, except vanilla, in a medium size saucepan. Cook and stir until it comes to a rolling boil. Boil for 1 minute while stirring.
Remove from heat and cool for 1 hour.
When cooled add 1 tsp vanilla. Beat with hand mixer until spreading consistency (smooth and thick). Spread over prepared cake.
Store in air tight container 2-3 days.
