Baked Chicken Thighs

Ingredients

  • 3 pounds skin-on bone-in chicken thighs about 6-8
  • 2 Tablespoons olive oil

Rub

  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¼ teaspoon chili powder
  • 1 teaspoon onion powder

Instructions

  • Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with foil for easy clean up. Set aside.
  • In a small bowl combine all the rub ingredients. Set aside.
  • Pat chicken thighs dry with a paper towel. Place on the prepared baking sheet. Drizzle thighs with olive oil, rubbing the oil into the chicken to coat.
  • Sprinkle rub mixture evenly over the chicken thighs. Turn the thighs over and evenly sprinkle remaining seasoning mixture on top. Make sure chicken thighs are skin-side up.
  • Place the baking sheet in a preheated oven at 400 degrees Fahrenheit for 35-45 minutes or until the internal temperature is 165 degrees Fahrenheit.
  • Remove from oven let rest for 5 minutes and serve.
