Mini Meatloaf Recipe

Perfect mini meat loaves loaded with cheddar cheese and topped with a ketchup sauce!

Ingredients

  • 1 egg
  • 3/4 cup milk
  • 1 cup cheddar cheese shredded
  • 1/2 cup quick oats
  • 1/2 cup onion chopped
  • 1 teaspoon salt
  • 1 pound lean ground beef
  • 2/3 cup ketchup
  • 1/2 cup brown sugar packed
  • 1 1/2 teaspoons prepared mustard

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a bowl, beat egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well.
  • Shape into eight loaves; place in greased 9x13" in baking dish.
  • In a small bowl, combine ketchup, brown sugar and mustard and spoon over loaves.
  • Bake, uncovered, at 350 degrees Fahrenheit for 45 minutes or until meat is no longer pink.
