Instant Pot Beef Stroganoff
Delicious, tender beef stew meat covered with a creamy sauce and served over egg noodles for a quick and easy dinner recipe!
- 3 Tbsp butter
- 3 cloves garlic minced
- ½ c. chopped onion
- 1 c. sliced mushrooms
- 2 Tbsp all purpose flour
- 3 c. low sodium beef broth
- 3 Tbsp Worcestershire sauce
- 2 lbs stew meat cut into 1’’ pieces
- 1 tsp salt
- ½ tsp pepper
- 1 tsp dijon mustard
- 16 oz egg noodles
- 1 c. sour cream
Set pressure cooker to saute. Add butter, garlic, onion and mushrooms. When the butter is melted sprinkle with flour and stir to coat. Cook until onions are translucent.
Add beef broth, Worcestershire sauce, stew meat, salt, pepper and dijon mustard. Stir mixture. Cover, turn the steam valve to the sealed position and set to high manual pressure for 15 minutes.
When time is up do a quick release (turn valve to venting position and remove the lid once the float valve drops.) Stir in egg noodles and set to high manual pressure for 5 minutes. Perform another quick release.
Stir in sour cream and serve. The mixture thickens as it sits.
What cut of beef is best?
We really like to use stew meat in this recipe, but we also have a Instant Pot Hamburger Stroganoff we love too.
Other options for this recipe include cubing up boneless rib eye, boneless sirloin, sirloin steak tips and beef tenderloin.
It really comes down to what I have on hand and want to use up!
What goes with Beef Stroganoff?
We recommend pairing this with a quick and easy vegetable or salad. Simply steam green beans, roast vegetables, toss together a side salad etc.
The egg noodles cook right in the Instant Pot so you only need to add the vegetable to make it a meal.
If you get really wild throw the vegetable in the instant pot with the stroganoff to cook!
How to Store the Leftovers
- Store the leftovers in an airtight container and they will keep well up for up to three days in the refrigerator.
- You can also freeze the leftovers! Make sure it's cooled and then keep them in a freezer-safe container for up to a month.
