- 12 Tablespoons unsalted butter melted and cooled
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 3 eggs room temperature
- 1 Tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup chocolate chips
Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 24 cup mini muffin pan and set aside.
In a mixing bowl, combine melted butter, and both sugars and mix until smooth.
Add the eggs and vanilla and mix for another 2 minutes.
Add the salt and baking powder and mix until combined.
Add in the cocoa powder and flour and mix until combined.
Mix in the chocolate chips.
Scoop the batter into the prepared muffin pan. (makes 44-48 bites)
Place pan in preheated oven at 350 degrees Fahrenheit. Bake for 12-15 minutes, or until the brownies are set.
Let sit in the pan for 10 minutes then take a knife and cut around the edges of each muffin and remove them from the pan and let them finish cooling on the cooling rack. Repeat with remaining brownie batter.
Allow to cool completely before storing! Then transfer to an airtight container or sealable plastic bags. If you have to stack the brownie bites, then place parchment paper between the layers to prevent sticking.
Store at room temperature for 3-4 days. You can also store in the fridge to extend their life!
