- 1 pound lean ground beef
- 1 medium yellow onion peeled and diced
- 1 ounce taco seasoning mix (1 package)
- 1 cup salsa
- 15 ounces black beans drained and rinsed
- 15 ounces sweet corn drained
- 9 ounces Frito corn chips 1 bag, divided
- 2 cups Mexican style cheese shredded and divided
- Top with your favorite taco toppings: green onion, cilantro, sliced black olives, tomato and a dollop of sour cream, optional
Preheat the oven to 350 degrees Fahrenheit. Prepare a 9x13-inch glass baking dish by spraying it with non-stick cooking spray, set aside.
Add ground beef and onions to large skillet. Cook over medium-high heat, stirring often, cook ground beef until fully browned. Drain off the excess fat.
Add the taco seasoning mix to ground beef in skillet. Stir to combine. Then add the salsa, corn and beans and stir to combine. Bring to a simmer and cook for 3-4 minutes, stirring often.
Pour half amount of Fritos into the bottom of the prepared baking dish. Sprinkle with 1 cup cheese. Evenly spread the meat mixture over the chips and cheese. Add the rest of the corn chips then add the remaining cheese on top of the Frito corn chips.
Cover the casserole place in the preheated oven at 350 degrees Fahrenheit for 18-20 minutes until hot and bubbly.
Cool slightly before serving.
Top with favorite toppings if desired.
