- 1 ½ to 2 pounds boneless skinless chicken breasts about 4 medium breasts
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 Tablespoons olive oil divided
- 1 small yellow onion finely chopped
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- 24 ounces pizza sauce 1 jar
- 1 ½ cups mozzarella cheese shredded
- 12 slices pepperoni
Place a rack in the center of your oven and preheat the oven to 375 degrees Fahrenheit.
Season the chicken with the salt and pepper, sprinkling both sides.
In a large ovenproof skillet, heat 1 Tablespoon olive oil over medium-high heat. Once hot, add the chicken breasts, and let cook for 2 to 3 minutes, until the surface is golden brown. Flip and brown the other side. Remove to a plate (the chicken does not need to be cooked through).
Reduce the heat to medium. Add the remaining 1 Tablespoon oil and the onion to the skillet. Sauté until the onion is tender, about 5 minutes.
Add in the garlic, Italian seasoning and pasta sauce to skillet. Let simmer for 5 minutes.
Nestle the chicken back into the sauce then sprinkle the cheese over the top of the chicken. Arrange the pepperoni slices on top.
Place the skillet in the oven and cook for 20 to 25 minutes, or until a thermometer inserted in the thickest portion of the chicken registers 165 degrees Fahrenheit.
Remove from the oven and enjoy.
Store cooked and cooled leftover Pizza Chicken Bake in an airtight container up to 3 days. If you made a side pasta dish with the same sauce, you can store them together.
To reheat leftover pizza chicken, place in oven at 350 degrees Fahrenheit for about 10-15 minutes or until internal temperature of the chicken reaches 165 degrees Fahrenheit.
