Mexican Casserole

Ingredients

  • 1/2-1 pound ground beef
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 15 oz. can tomato sauce
  • 1 cup salsa
  • 1 15 oz. can Great Northern Beans, drained
  • 1 cup shredded cheddar cheese
  • crushed corn chips to taste

Instructions

  • Preheat your oven to 350 degrees F.
  • Cook the ground beef over medium heat on the stove, about ten minutes. When beef is no longer pink, drain the fat, and then add all the spices along with the tomato sauce, salsa, and beans.
  • Put a layer of broken or crushed corn chips in a casserole dish. Pour the beef/bean mixture on top.
  • Sprinkle with half of the shredded cheese.
  • Put another layer of corn chips over the top. Sprinkle the rest of the cheese over the chips.
  • Cover the casserole with foil or a lid and bake for 30-40 minutes. Remove the foil or lid for the last ten minutes to allow the cheese to get bubbly.
  • Garnish with green onions and sour cream if desired.
