- ½ cup butter softened
- ½ cup canola oil
- 1 ¾ cups white sugar
- 2 eggs
- ½ cup buttermilk
- 1 teaspoon vanilla
- 2 ½ cups all-purpose flour
- 4 Tablespoons unsweetened cocoa powder
- ½ teaspoon baking powder
- 1 teaspoon soda
- 1 tsp salt
- 2 cups zucchini grated
- 1 cup semi sweet chocolate chips
Preheat oven to 325 degrees Fahrenheit. Spray a 9x13 inch pan or two 8x8 inch pans with non-stick spray. Set aside.
In a large mixing bowl cream butter, oil, eggs and sugar. Add buttermilk and vanilla. Mix until combined.
Sift dry ingredients together. Mix into creamed mixture until just combined. Stir in zucchini.
Spread in a greased 9x13 inch baking pan or 2 - 8x8 inch pans. Sprinkle chocolate chips over the top.
Bake in preheated oven at 325 degrees Fahrenheit for 40-45 minutes for the 9x13 inch pan or 35 minutes for the 8x8 inch pan.
