Ingredients

  • ½ cup butter softened
  • ½ cup canola oil
  • 1 ¾ cups white sugar
  • 2 eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla
  • 2 ½ cups all-purpose flour
  • 4 Tablespoons unsweetened cocoa powder
  • ½ teaspoon baking powder
  • 1 teaspoon soda
  • 1 tsp salt
  • 2 cups zucchini grated
  • 1 cup semi sweet chocolate chips

Instructions

  • Preheat oven to 325 degrees Fahrenheit. Spray a 9x13 inch pan or two 8x8 inch pans with non-stick spray. Set aside.
  • In a large mixing bowl cream butter, oil, eggs and sugar. Add buttermilk and vanilla. Mix until combined.
  • Sift dry ingredients together. Mix into creamed mixture until just combined. Stir in zucchini.
  • Spread in a greased 9x13 inch baking pan or 2 - 8x8 inch pans. Sprinkle chocolate chips over the top.
  • Bake in preheated oven at 325 degrees Fahrenheit for 40-45 minutes for the 9x13 inch pan or 35 minutes for the 8x8 inch pan.
