Slice the vanilla bean in half and scrape out the seeds. Combine the vanilla bean, heavy whipping cream, and salt. Simmer and let it sit.

Meanwhile, separate the egg yolks from the whites and add them to a bowl. Whisk some sugar into the egg whites and mix. Ladle the cream mixture into the eggs and whisk.

Pour the mixture into another bowl through a fine mesh sieve. Line up the ramekins in a dish, then fill them with creme. Pour boiling water around the pan.

Bake and allow them to chill. Before serving, sprinkle the tops with sugar and caramelize them using a butane torch.
