California Burrito

Delicious, mouthwatering burrito stuffed with tender skirt steak, French fries, cheese, sour cream, guacamole and salsa!

Ingredients

  • 1 pound flank/skirt/bottom round steak
  • cup soy sauce
  • cup olive oil
  • ¼ cup chopped cilantro
  • 4 cloves garlic finely minced
  • ½ teaspoon black pepper
  • ½ teaspoon Kosher salt
  • 2 cups French fries
  • 1 teaspoon taco seasoning
  • 1 cups shredded sharp cheddar cheese
  • ½ cup sour cream
  • ½ cup guacamole
  • ½ cup salsa
  • 4 burrito size flour tortillas

Instructions

  • Add soy sauce, olive oil, cilantro, garlic, salt, and pepper to a shallow dish.
  • Add steak and toss to coat. Cover and refrigerate for 1-2 hours and up to 12 hours.
  • When ready to make the burritos cook fries according to package directions and season with taco seasoning.
  • Heat a large cast iron skillet over medium-high heat.
  • Transfer marinated steak from the marinade to the skillet. Sear meat for 3 minutes on each side or until internal temp of 140 degrees Fahrenheit or your desired doneness. Let rest for 5 minutes, then thinly slice against the grain.
  • Assemble each burrito by grabbing a flour tortilla and adding ¼ of the steak, ¼ of the shredded cheese, ¼ of the fries, a couple tablespoons of sour cream, guacamole and salsa.
  • Roll into a burrito. Repeat with remaining ingredients until all 4 burritos are rolled. Slice in half and enjoy!
