Fudgy Marshmallow Brownies ~ Soft, Chewy Brownie Topped with Marshmallows and Chocolate Frosting! This is our Favorite Brownie of all time and it will soon be yours too!
These delicious Fudgy Marshmallow Brownies start with a chewy, brownie on the bottom and then are topped with ooey, gooey marshmallows and a delicious chocolate frosting or icing which ever you’d like to call it! They are famous in our family and people come from all over to get their hands on them!
Ingredients Needed for Fudgy Marshmallow Brownies!
- Fudge Brownie Mix + Ingredients to prepare
- Marshmallows
- Half & Half
- Butter
- White sugar
- Chocolate chips
I’m going to let you in on a little secret today. Well, it’s really not a secret and you might have already figured it out if you read my blog posts regularly. My Mom is my best friend. She’s an amazing woman and she’s my “person”. She gets me. She doesn’t judge me. She listens. She supports. She’s that person in my life that all of you wish you had in your life and I hope you do!
She’s so cool that my friends have often told me they love her too because of her kindness and love that’s she’s shown them over the years. She was that mom that would bake you and your friends cookies in high school at 10 pm because you asked and she rocks. True story.
My mom also rocks in the kitchen. This is where I get my talent from. She’s a recipe follower though and I think I stress her out just a little when I start throwing things in that aren’t called for on the recipe. Over the years she’s learned to look the other way when this happens and try to trust me.
There are some recipes that I don’t dare alter and today I’m sharing with you one of those. This is my mother’s secret weapon. The treat that everyone begs for. This is how my family bribes teenagers to come out and “rock pick” in the spring. The promise of my mom’s Fudgy Marshmallow Brownies. I’m telling you these treats have powers. I’m thinking if you are trying to snag a guy he will propose after one bite. I actually have no doubt in my mind that he will!
Today I’m bringing you these fabulous brownies plus I’m partnering with Bon Appetit and Epicurious to talk about the importance of face-to-face time in the kitchen. I love to spend time with my family in the kitchen weather it be my mom, Miss K, or other family members. I find it a great way to connect and bond with them. I remember licking the spatula and giggling over stories with Mom growing up and Miss K is quickly learning to grab the spatula and follow in my footsteps. I can’t wait to create long lasting memories between Miss K and I plus Grandma while making treats!
Currently one of our favorites spots to create memories in the kitchen is at our cabin. We are up there a lot throughout the summer and everyone pitches in to help with meals. I usually head up the main dishes with Mom assisting then Grandma and Miss K are on clean up duty! It’s so fun to watch my mom and Miss K interact while doing dishes. Miss K is talking a mile a minute nodding her head and making hilarious facial expressions and my Mom is giggling. These are memories I’m going to cherish the rest of my life and I’m pretty sure they are too!

Fudgy Marshmallow Brownies
Ingredients
- 18.3 oz package Betty Crocker Fudge Brownie Mix + Ingredients to prepare
- 2 c. marshmallows
- 6 Tbsp half and half
- 6 Tbsp butter
- 1 1/2 c. white sugar
- 1/2 c. chocolate chips
Instructions
- Prepare brownie mix according to package directions.
- Cover prepared brownies with marshmallows immediately after baking and set in hot oven that's been turned off until they puff up about 2-3 minutes. Remove from oven.
- In a medium size saucepan bring half and half, butter and white sugar to a boil. Boil for one minute, stirring frequently not to scorch the bottom. Stir in chocolate chips, stirring mixture until they are melted and frosting is smooth. Immediately spread over brownies.

Not sure what the deal is with the frosting. It’s just a runny greasy mess. Are measurements correct? Seems like an awful lot of sugar compared to the small amts of dairy. Idk. Probably won’t be doing this again.

The measurements should be correct – I’m sorry to hear that, I haven’t had this issue. Did you bring the mixture to a boil before adding the stirring in the chocolate chips?

I don’t have any half and half……can I use milk for the topping? Also, I only have regular size marshmallows. I think I’ll try cutting them up in smaller pieces….will that work okay?

Whole milk might work, I haven’t tried it though. The marshmallows should work out.

Absolutely delicious! I’ve made these several times, I have the frosting down, now! One time I don’t think I was letting the sugar “boil” before setting the timer, more of a simmer.
My only suggestion is make sure to do a rolling boil for a full minute, so you get to that soft ball stage to get the firm set on top of the frosting.
My hunny just made brownies, because I’m feeling yucky, but I still couldn’t resist throwing on marshmallows and whipping together some frosting to pour on 🤣 The frosting definitely taste like fudge!

I just made a batch of these and they were spectacular. My family went absolutely crazy for them. I let the marshmallows cool before adding the chocolate glaze and they came out perfectly gooey with distinct layers. I’ll DEFINITELY be adding these to the rotation! Thank you! (My family was especially grateful for something new and unexpected during lockdown!)

I just made these, but we won’t eat them until after dinner. However, I wanted to ask if you spread the marshmallows out or let them be after they are puffed up? They sure look and smell good. My husband wanted to get ice cream, but no room in freezer so next time!

The marshmallows were maybe still too soft from the oven – next time let them cool a bit first and then pour on the chocolate topping. I’m glad you still enjoyed them!

They are delicious and gooey served warm but they are also great served later after they have cooled.
