Fudgy Marshmallow Brownies ~ Soft, Chewy Brownie Topped with Marshmallows and Chocolate Frosting! This is our Favorite Brownie of all time and it will soon be yours too!
These delicious Fudgy Marshmallow Brownies start with a chewy, brownie on the bottom and then are topped with ooey, gooey marshmallows and a delicious chocolate frosting or icing which ever you’d like to call it! They are famous in our family and people come from all over to get their hands on them!
Ingredients Needed for Fudgy Marshmallow Brownies!
- Fudge Brownie Mix + Ingredients to prepare
- Marshmallows
- Half & Half
- Butter
- White sugar
- Chocolate chips
I’m going to let you in on a little secret today. Well, it’s really not a secret and you might have already figured it out if you read my blog posts regularly. My Mom is my best friend. She’s an amazing woman and she’s my “person”. She gets me. She doesn’t judge me. She listens. She supports. She’s that person in my life that all of you wish you had in your life and I hope you do!
She’s so cool that my friends have often told me they love her too because of her kindness and love that’s she’s shown them over the years. She was that mom that would bake you and your friends cookies in high school at 10 pm because you asked and she rocks. True story.
My mom also rocks in the kitchen. This is where I get my talent from. She’s a recipe follower though and I think I stress her out just a little when I start throwing things in that aren’t called for on the recipe. Over the years she’s learned to look the other way when this happens and try to trust me.
There are some recipes that I don’t dare alter and today I’m sharing with you one of those. This is my mother’s secret weapon. The treat that everyone begs for. This is how my family bribes teenagers to come out and “rock pick” in the spring. The promise of my mom’s Fudgy Marshmallow Brownies. I’m telling you these treats have powers. I’m thinking if you are trying to snag a guy he will propose after one bite. I actually have no doubt in my mind that he will!
Today I’m bringing you these fabulous brownies plus I’m partnering with Bon Appetit and Epicurious to talk about the importance of face-to-face time in the kitchen. I love to spend time with my family in the kitchen weather it be my mom, Miss K, or other family members. I find it a great way to connect and bond with them. I remember licking the spatula and giggling over stories with Mom growing up and Miss K is quickly learning to grab the spatula and follow in my footsteps. I can’t wait to create long lasting memories between Miss K and I plus Grandma while making treats!
Currently one of our favorites spots to create memories in the kitchen is at our cabin. We are up there a lot throughout the summer and everyone pitches in to help with meals. I usually head up the main dishes with Mom assisting then Grandma and Miss K are on clean up duty! It’s so fun to watch my mom and Miss K interact while doing dishes. Miss K is talking a mile a minute nodding her head and making hilarious facial expressions and my Mom is giggling. These are memories I’m going to cherish the rest of my life and I’m pretty sure they are too!

Fudgy Marshmallow Brownies

Ingredients
- 18.3 oz package Betty Crocker Fudge Brownie Mix + Ingredients to prepare
- 2 c. marshmallows
- 6 Tbsp half and half
- 6 Tbsp butter
- 1 1/2 c. white sugar
- 1/2 c. chocolate chips
Instructions
- Prepare brownie mix according to package directions.
- Cover prepared brownies with marshmallows immediately after baking and set in hot oven that's been turned off until they puff up about 2-3 minutes. Remove from oven.
- In a medium size saucepan bring half and half, butter and white sugar to a boil. Boil for one minute, stirring frequently not to scorch the bottom. Stir in chocolate chips, stirring mixture until they are melted and frosting is smooth. Immediately spread over brownies.

I made these for a scout banquet last night. They were a great hit. They’re going into our family favorite binder. I sent a link to someone who asked about the recipe as well. Now, I just have to figure out how to cut them into smaller pieces, because it is VERY rich.

I’m very disappointed in the frosting. It didn’t mix. In retrospect, I wondered about “white sugar”. Did you mean confectioners, which probably would have worked, not cane sugar. Which would explain some of the other comments on the recipe. I will try it again because it was super easy and if the frosting worked, I think would be delicious.

Granulated sugar. It’s definitely important to let the sugar come to a boil before letting it start to simmer.

Been making this recipe for several years. Made the mistake of bringing this to my monthly meeting and now they won’t let me in the door without them. I do cut the sugar a bit for the icing. My friends named it “Death by Chocolate “.

Make sure to seal them tight in an air-tight container and they should still be chewy and soft after a couple days!

What kind of chocolate chips do you use? Semi sweet or the milk chocolate kind? Is there a certain brand that you use like Nestle or another brand?

I use semi-sweet just to tone the sweetness down a bit but you could use milk chocolate if you prefer. I’m not big on any certain brand, they should all taste about the same!
