Pineapple Cooler ~ Cool, Sweet & Creamy Dessert Drink Recipe Perfect for Hot Summer Days!
This time of year I’m all about quick & easy ways to cool down. Limiting my time in the kitchen is key, which means I’m making a whole lot of no-bake goodies, homemade frozen yogurt & countless frozen coolers to enjoy in the afternoons. I think that’s one of the best parts about summer, we all are perfectly content with something simple & yet effective. We all want a way to cool down with something tasty & if it’s easy too- that’s even better. So it’s no wonder this Pineapple Cooler is a “go-to” summer dessert in our house.
Before we lived here in North Idaho we spent 12 long years living in the desert. So we had a good 8 long months or more of summertime temps. I spent a lot of time finding ways to cool down quickly during those years. I have a never ending supply of easy & cool treats to refer to when the heat is on & I’m thrilled to be sharing one here with you today.
One of my favorite ways to cool down is to take a beverage we all love & pop it in the blender with a whole lot of ice. This takes that favorite drink & makes it a cool & even more refreshing like a slushie. You feel like you are indulging, but really it’s just a cooler version of your drink.
I happen to really love pineapple. It’s tropical taste is the essence of summer & I can’t get enough. So I took that favorite flavor & with just a couple other ingredients I was able to whip up a tall pitcher of this pineapple cooler to enjoy after dinner one evening. It made enough for the 5 of us – so if you need a little less, maybe have a smaller family- go ahead & cut this recipe in half.
I love that this is easily adaptable too. A great way to cool down this summer!

Pineapple Cooler
Ingredients
- 2 cups chunked pineapple
- 2-½ cups ice
- ½ cup half & half
- ¼ cup confectioners sugar
- Additional pineapple chunks for garnish opt
Instructions
- Place all ingredients in blender & blend on high speed for at least 90-120 seconds or until all ice is crushed & mixture is like a slushie.
- Garnish with additional pineapple chunk if desired
- Enjoy immediately.
