Ranch Crock Pot Carrots ~ Super Quick to Make for the Holidays in Your Slow Cooker when Oven Space is Limited!

Thanksgiving means lots of food, and limited space. Free up your oven and stove with these slow cooker ranch carrots. Super quick to make, and packed full of flavour!
October is one of those months where I feel I cannot keep up with anything! Our entire household shares birthdays in October, followed by Canadian Thanksgiving, Halloween, conferences, and extra curricular activities. By the end of the month I am exhausted! But let’s be honest, autumn is my favourite season, especially when it comes to food 🙂 And I am The Cookie Writer, so you better believe I want some funky Halloween cookies showing up!
Having just celebrated our Thanksgiving, I am all prepared for the do’s and do not’s of American Thanksgiving. These ranch crock pot carrots are not only super easy to make, but they free up oven and stove space (which is definitely an issue around the holiday season.) I couldn’t get over how well they turned out. The perfect tender-crisp texture, the bold flavours, and the ease of clean up! 3 hours on high heat was perfect, and no soggy carrots were to be found.
As always, you can adjust ingredients accordingly. I found I wanted more ranch flavour in the end so I sprinkled on another teaspoon of powered seasoning after the carrots were completed cooking. Otherwise, no complaints here, and I had to push away little hands so we could get some photos in! My dad despises onions so I know his version would omit those delicious flavours. But no water or liquid is needed here as the carrots release their own juices (and the butter does help!)
Sprinkle with fresh chives, green onions, or parsley and you have the perfect festive side dish for Thanksgiving! Just remember to grease the slow cooker before adding the ingredients for easy clean up (because we all know no one wants to do dishes after gorging!)

Slow Cooker Ranch Carrots
Ingredients
- 2 lbs carrots cut into matchsticks
- 1 onion diced
- 3 tbsp. butter
- 1 tbsp. + 1 tsp. powdered ranch seasoning
- Salt and pepper
- Green onions or chives for garnish
Instructions
- Place carrots, onion, salt, pepper, and 1 tbsp. ranch seasoning into greased slow cooker. Toss. Add butter on top, cover, and cook on high for 3 hours. Sprinkle with remaining ranch seasoning and toss.
- Serve with a garnish of chives or green onions if desired.

I made half recipe. Cooked on high in the crockpot for 2.5 hours. PERFECT! Carrots are totally cooked and it tastes like Heaven! Definitely will have this again!

When you say matchstick sliced how thin should they be? Do you think if they were sliced into thin coins that would work? Thank you.
