Ingredients for Peanut Butter Cookies
- Egg – You only need one large egg but if you prefer a softer cookie, add an extra one. The egg is what keeps the cookie together.
- Granulated sugar – This gives the cookies a lightly crispy texture around the edges.
- Peanut butter – Jif peanut butter works best, but any regular creamy peanut butter will work. We do not recommend using a natural peanut butter because it may cause the cookies to spread to much.
Peanut Butter Cookie Variations
- Add chocolate chips or finely chopped nuts to change these cookies up.
- If you want a sugar coating, roll each cookie dough ball in granulated sugar before placing them on the baking sheet.
- For a twist, add a little flaky sea salt on top of each cookie before you bake them.
How to Make Easy Peanut Butter Cookies
Combine the egg, peanut butter, and sugar in a large mixing bowl. Mix with an electric mixer until smooth and creamy.
Form the dough into cookie dough balls. Place them on the prepared baking sheet.
Use a fork to press the cookies to create a criss-cross pattern on top of each cookie.
Place the baking sheet in the preheated oven and bake the cookies for about 10 minutes or until they just start to turn golden around the edges.
Leave the peanut butter cookies on the baking sheet for one to two minutes and then transfer to a wire rack to cool completely.
Pro Tips
- Don’t over bake the cookies. Keep an eye on them and as soon as they are set and starting to turn golden around the edges, take them out of the oven. If you over bake them, they will be crumbly.
- The cookies do not spread much as they cook, so you can place them close together on the baking sheet.
Storage
Room temperature: Store the cooled cookies in an airtight container and they will keep well for four days at room temperature.
Freezer: Once the cookies are completely cool, store them in a freezer bag or airtight container. They will keep well frozen for up to three months. Thaw them at room temperature before serving.
You can also freeze uncooked peanut butter cookies. Follow all directions, but instead of baking, pop them into the freezer to freeze individually before storing them in a freezer bag. Let them come to room temperature set out on the baking sheet before baking.

- 1 egg large
- ¾ cup granulated sugar
- 1 cup peanut butter creamy
Instructions
- Preheat oven to 350 degrees Fahrenheit. Place a piece of parchment paper or a silicone mat on baking sheet and set aside.
- Combine egg, peanut butter, and sugar in a bowl by hand or with a stand mixer until smooth and creamy.
- Scoop dough and roll into balls. Use the back of a fork to press down on the cookies twice to make a crisscross pattern.
- Bake the cookies for 8-10 minutes in preheated oven or until the edges just start to brown. Remove cookies from oven and let cool for 1-2 minutes before transferring to a cooling rack to cool completely.
