- Boneless skinless chicken breasts – It tends to be easiest to use boneless skinless chicken breasts, but you can also use boneless skinless chicken thighs.

- dried oregano
- dried thyme
- garlic powder
- kosher salt
- smoked paprika
- cayenne pepper

How to Make Blackened Chicken
Mix together the blackened chicken rub in a small bowl and then set it aside. Slice the chicken breast in half lengthwise and then pat dry with a paper towel.
Melt 3 tablespoons of butter and then use a basting brush to coat each side of the chicken breast. Sprinkle the blackened seasoning on one side, then flip and repeat on the other side.
Preheat a large skillet over medium-high heat and then melt the remaining 3 tablespoons in the pan.
Place the chicken breasts in the skillet, working in batches as needed. Cook for 6 minutes, and then flip and then cook the other side.
Cook until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
Take the chicken off of the frying pan and then let it rest for a few minutes. Then serve with your favorite side dishes!
How to Store Blackened Chicken
Allow chicken to cool completely before transferring to an airtight container or a plastic bag with the air squeezed out.
FRIDGE: Place container in the refrigerator and store for 3-4 days.
FREEZER: Wrap each chicken breast in plastic wrap or aluminum foil, then transfer to an airtight container or freezer bag. Freeze for up to 3 months. Allow to thaw before reheating.

- 2 boneless Chicken breasts
- 6 Tablespoons butter divided
Blackened Rub Ingredients
- 1 Tablespoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon Kosher salt
- ½ teaspoon cayenne pepper can add more or less depending on how hot you want it
Instructions
- In a small bowl mix together the rub ingredients and set aside.
- Slice the chicken breasts in half lengthwise to make 4 thin chicken breasts.
- Pat the chicken breast dry with a paper towel.
- Melt 3 Tablespoons of the butter in a bowl. Using the basting brush, brush the melted butter on the chicken breasts and then sprinkle the Blackened Rub on the chicken breasts. Flip the chicken breasts over and repeat on the other side.
- Preheat a frying pan on medium-high heat then melt the remaining 3 Tablespoons of butter in the pan.
- Working in batches if needed, place 2 of the chicken breasts in the frying pan and let cook.
- Once there is a good char on the chicken breasts, 6 minutes, flip it over to cook the other side. Cook for another 6 minutes.
- Cook until internal temp of 165 degrees Fahrenheit. Time may vary depending on the thickness of your chicken breast.
- Take the chicken off the frying pan and let rest for a few minutes, repeat with remaining chicken if needed.
