When I was growing up my Mom always made a homemade breakfast on Sunday morning before we went to church. Usually it was French Toast, Pancakes or Waffles. I remember waking up to the sweet scent of breakfast and rushing to the table to see what she whipped up that morning.
Unfortunately, so far, I have not followed in my mother’s awesome footsteps in this tradition. My girls are not woken to homemade breakfast on Sundays. Maybe when they get older and it doesn’t take so long to get ready and out of the house on Sunday mornings?
One tradition we have started when it comes to breakfast is making a big homemade breakfast on the weekends when we are at the cabin. That’s when I spoil them! Typically it’s because we aren’t on a schedule and it turns into more of a brunch then breakfast!
One of my favorite things to make for breakfast is overnight breakfast casseroles because I do the work the night before and just pop it in the oven the morning of. Usually, the hubs pops it in the oven because he let’s me sleep in. See, there’s alternative motives here!
I made this Corned Beef Hash Overnight Breakfast Casserole with MARY KITCHEN® Corned Beef Hash at the cabin one weekend. My mom was helping me get it ready the night before and started talking about how her mom used to make MARY KITCHEN® Corned Beef Hash. I always love to hear about my mom’s memories as a child and about my grandma. It’s amazing how many different ways you can connect over food! After we got it prepped we popped it in the fridge and went to bed.
The next morning my hubs got up with the kiddos and put it in the oven while I got some more shut eye. I know, you’re all jealous aren’t you? As the wonderful smell drifted to my room I knew it was time to crawl out of bed and set the table so we could enjoy breakfast. I timed it perfectly. My mom had just set the table and the casserole was coming out of the oven. I’m sneaky like that!
We all quickly devoured the breakfast! This amazing breakfast casserole has a homemade gravy that you just can’t beat. I’ll be the first to admit that I may have indulged in one to many bites and after cleaning up hit the couch to rest a bit! I sound like I have quite the life don’t I?
This is the perfect overnight breakfast casserole for lazy weekends, entertaining company and holidays! You’ll be indulging in one too many bites too!

Corned Beef Hash Overnight Breakfast Casserole
Ingredients
- 2 cans MARY KITCHEN® Corned Beef Hash
- 1/2 c. minced onion
- 1/2 c. flour
- 3 c. milk
- 2 tsp hot sauce
- 3 c. Colby Jack cheese divided
- 10 eggs beaten
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- In a large skillet brown Corned Beef Hash and onion over medium heat, until cooked through.
- Add the flour to the mixture and continue cooking for 2 minutes, stirring occasionally. Slowly add milk and bring the mixture to a biol. Reduce heat and let simmer for 1-2 minutes or until thickened.
- Remove from heat and add hot sauce and 2 c. of cheese. Stir until melted and set aside to cool for five minutes. Transfer to large bowl and add beaten eggs, salt and pepper. Stir until combined.
- Pour mixture into a lightly greased 9x13'' baking dish. Place in fridge overnight.
- Preheat oven to 350 degrees. Bake casserole for 1 hour or until the middle is set and edges are golden brown. Top with remaining cheese and bake 5 more minutes or until cheese is melted.

This is awful. 3 cups of milk is way too much and turns the entire thing into a sloppy mess, despite leaving it on the burner for 20 minutes to boil it down and leaving it in the oven an extra half hour. The finished product is completely bland. There is no way the 5* rating is legit.

If only I could rate lower because this was the most, disgusting, vile sin against the culinary arts I have ever tasted in my life. Basically, it is hash, smothered in milk and egg. It’s disgusting, under seasoned and looks like puke. I would rather suck on a dirty q tip as a lollipop than eat this sh*t again. Oh yeah, need to mention that the reason why it’s smothered in cheese is because without it, it looks like this grey, mushy vomit. I don’t know who this person bribed to get a 4.8 star but it should be much, much lower than that. Overall, terrible recipe, my family hates me for ever trying this recipe out and my brother had been getting horrible diarrhea after eating this slop. -2/10

Overnight corn beef hash casserole had no flavor at all. Will not make that again. Maybe too much flour or milk??

Oh I’m sorry, yes! The gravy is made in step 2 when you add the flour and milk to the skillet.
