Let’s talk egg bakes. I’m sorta, kinda particular about them.
I hate them with bread, but I’m all about them with potatoes. It’s just a texture thing I’m thinking. The bread comes across as mushy to me. Mushy is a no go in Julie’s life. Texture can totally put me off a recipe. But if you throw potatoes in an egg bake I’m eating up hand over fist. Anyone else feel like this about bread in egg bakes?
It started as a young child and I haven’t ever tried bread egg bake again. I think I’ve maybe, mostly likely made this a huge deal in my mind and it’s really not but now I have a irrational fear of trying it. Ridiculous huh?
As ridiculous as it might be I’m going to leave it be unless I’m forced into eating an egg bake with bread so if you want to torture me please invite me over and see me squirm when you feed me this. It will be great entertaining… for you. Not me.
This egg bake is loaded with Tater Tots to replace the bread obviously peeps, Canadian bacon and cheese. I mean it’s kind of a wining combination you shouldn’t mess with. Everything is way better with cheese right? Ask my hubs he’s totally in agreement with this. Plus you throw it together the night before and wake up to a home baked breakfast. I mean people we could get really wild and treat your family to an awesome breakfast during the week. I mean that’s wild in my life. To replace the bowl of cereal with an Egg Bake? Total craziness. Anyone with me?
Or it’s a great treat on Christmas morning. Or Saturday morning. Or Sunday morning.
Say what? Did I just say CHRISTMAS!? Gasp. How can that be on my radar already. Totally thinking of the future, way future there but hey give it a Pin and save it for then because I’m right. It would be pretty awesome on Christmas morning.

Crock Pot Tater Tot Egg Bake
- 30 oz Tater Tots
- 6 oz Canadian bacon or ham diced
- 2 onions chopped
- 2 c. shredded cheddar cheese
- 1/4 c. grated Parmesan cheese
- 12 eggs
- 1 c. milk
- 4 Tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp pepper
- In a greased 5-quart or larger slow cooker, layer 1/3 of the Tots, Canadian Bacon, Onions and cheeses. Repeat these layers twice ending with the layer of cheeses.
- In a large mixing bowl whisk together the remaining ingredients and pour over the ingredients in the slow cooker.
- Cover and cook on high 2 1/2 - 3 hours or low for 6-8 hours.
