Grilled Corn Salsa ~ Fresh, Healthy and Delicious Appetizer Made with Grilled Corn! Perfect for Dipping, Topping or Eating by the Spoonful!
That moment you make a recipe and you are pretty sure you can sit down and inhale the entire thing. Typically I do that with desserts, but this time it was something healthy! This Grilled Corn Salsa is AMAZING! Loaded with grilled corn, onion, tomatoes, cilantro and lime juice! All those flavors come to gather to form an amazing salsa that pairs perfectly a few salty chips!

Ingredients Needed for Grilled Corn Salsa!
- Corn
- Purple onion
- Lime juice
- Tomatoes
- Cilantro
- Garlic, minced
- Kosher salt
- Ground black pepper
You guys. We had an unfortunate event this past weekend. It involved a bat in our living room. I have never, ever had a bat in the house anywhere that I’ve lived and I’ve decided it is the worst, absolute worst, thing that could ever happen. Well, maybe not that bad, but it is something I pray that it will never happen again.
It all started out at 5 am on Saturday morning when I heard “that sound”. You know the sound a bat makes? I didn’t think I did, but apparently I did because as soon as I woke to it I was hitting my hubs to wake up. After I got him awake and he went to investigate I started freaking even more. He came back to the bedroom and informed me it was either a bird or a bat. Ok, hun I’m not that dumb. It’s a bat, but nice try. Needless to say as soon as he flipped the light on it disappeared.
After locating the bat in the curtains and removing it we went back to our regular routine. We didn’t think much of it other than the fact we needed someone to get our house “bat proofed”. I wasn’t sure who to call so I made an innocent post on Facebook asking my friends recommendations. I quickly received many recommendations.
I also had a few people comment asking if I got the bat tested for rabies. Uh, no can’t say I did. I guess it never dawned on me. Apparently it’s highly recommended that you do this to rule out rabies. Did you know that you can get bit by a bat and not feel it? Neither did I. Tip to you, if this happens to you get the bat tested!
This is when I get a call from my doctor asking me about the situation since she’s my Facebook friend. After A LOT of hee-hawing around on my part and trying to get out of rabies shots we decided our entire family would go in for the series of shots at the recommendation of about every doctor at our local clinic.
Luckily for us the series of shots isn’t as bad as it used to be and we will survive and this will be just a blip on the radar of life. Better than dying from rabies right? Yup, that’s what I thought!
If you are like me you are getting your hands on all the fresh sweet corn you can get right now. It is a main ingredient in almost every meal I have right now. Corn on the cob is one of my favorite summer treats! I decided it was time I made a delicious, healthy snack out of it too. That’s when this Grilled Corn Salsa was born!

Seriously. I think I’m going to make another batch just to drown my sorrows about our shots in. You can eat this with chips, top your meat or just eat it with a spoon its so flavorful!

Grilled Corn Salsa

Ingredients
- 2 c. corn charred or grilled
- 1/2 c. diced purple onion
- 1 1/2 Tbsp fresh lime juice
- 2 vine ripened tomatoes seeded & diced
- 1/4 c. chopped cilantro
- 1 clove garlic minced
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- Mix all ingredients in bowl. Chill or serve immediately.
