Loaded Potato Bombs ~ Grab your Simply Garlic Mashed Potatoes and Load Them with Bacon and Cheese!
I’m assuming all of you have, by now, figured out I’m all about easy. Once in a great while I’ll throw out a recipe with more than four simple steps or more than a handful of ingredients, but really that’s far and few between.
I’m a working mom with a family and a blog. Enough said right? My life is not glamorous and I’m not out to show you how amazing I am by making 5 course meals and impressing everyone. I’m here to show you simple can be amazing. Simple can be impressive! If I can impressive people with a recipe with four steps and handful of ingredients why oh why would I go through the trouble of making a super complicated recipe instead?
More or less….I’m practical. I love being in the kitchen, but I love being with my family too. I try to make recipes and meals work with my lifestyle not me work for them! I’m sure you’re all nodding your head in agreement by now right?

I also have a tiny bit of a confession to make today. I’ve never actually made homemade mashed potatoes. Insert. Gasp. Now. I’m scared of them. I’ve heard horror stories of them turning out with lumps and bumps or runny and well I just don’t have time for that business!

Today I’m sharing these amazing Loaded Potatoes Bombs. They are individual portions of mashed potatoes loaded with bacon, cheese and garlic! Sound familiar? When I find a good them I just go with it! I love how the edges are a little crisp and inside it’s fluffy mashed potatoes

Loaded Potato Bombs
Ingredients
- 1 lb Simply Made Garlic Mashed Potatoes
- 1/2 c. real bacon bits
- 1 tsp salt
- 1/8 tsp pepper
- 1 1/2 c. Colby-Monterey Jack cheese shredded, divided
Instructions
- Preheat oven to 350 degrees.
- Warm mashed potatoes in microwave until easy to stir. In a large bowl combine the potatoes, salt, pepper, bacon bits and 1 c. shredded cheese.
- Grease 10 muffin cups. Divide potato mixture between muffin cups and sprinkle with remaining cheese.
- Bake 15-20 minutes or until golden brown around the edges. Let cool 5 minutes. Remove from pan.

What’s so intimidating about mashed potatoes? You peel, dice, and cook the potatoes till they mash easily against the side of the pot. Drain, add real butter, a little milk and salt. Use an electric mixer and beat till they are smooth. I sometimes serve instant mashed potatoes, in a pinch, but my family loves “real” mashed potatoes. I intentionally leave some lumps, so the family knows they are made from “real” potatoes. If I get the potatoes too thin, I add a little instant potatoes and mix till I get them just right. Easy, peasy! No need to freak out over mashed potatoes. The first time my ex-mother-in-law (German) saw me use an electric mixer to mash the potatoes she freaked! Called me all kinds of names, in German & English, and implied that I must be Satan’s daughter!!! I laugh about this every time I make mashed potatoes with a mixer, then I stick out my tongue! It works for me and everyone in my extended family loves them. IF there are ever any leftovers, I make potato pancakes the next morning for breakfast, by adding an egg, self-rising flour and a little milk if needed. They fry up crispy on the outside and soft on the inside.
