    Julie, I am dying a little over here looking at this cheesy goodness! Potatoes are my favorite but I’ve never tried making them in a crock pot. That needs to be remedied immediately, obviously :)

      Cream of Mushroom would probably work!

          It was really cheesy to begin with so I would worry about that. You could leave some of the shredded cheese out unless you thought it needed it at the end!

      My hubby doesn’t like Cream of Chicken so I substitute Cream of Onion and leave out the onion flakes.

      I haven’t ever tried it like that but I would think you could, just watch the cooking time and make sure there is enough liquid!

    Made these several times. Yummy. Last time I used O’Brien potatoes and added about a cup or so of some small cubed ham. I bought some 1/4″ thick ham slices at the local deli counter and diced them up. Wow!!! I think the next time I will try some cubed or perhaps even some canned chicken (not raw). Of course everything goes better with cheese!!! This recipe just lends itself to so many different additions. Thanks.

    I just made a version of this, used fresh potatoes and cream of broccoli instead- AMAZING! I cooked on high for 5 hours and it came out deliciously! Everyone loved it :) thanks for the recipe! I just used what I had to substitute and it still turned out great!

    I love, love these cheezy potatoes. How do you think I could get that cornflake topping on the crockpot potatoes. I thought I could just toast the cornflakes and butter in the oven and when the potatoes are done in the crockpot, just sprinkle the topping on. What do you think?

      I’d think 1-2 hour additional cook time would be fine.

    I need to double this recipe. Will it fit in a normal large sized crock pot? Also I am using fresh potatoes, how many do I use please?

      I would think a crock pot about 6 quart would work just fine. As for the fresh potatoes I’m not sure how many you’d need since I’ve never made it like that. Sorry!

      I haven’t tried this, but if you do it do not thaw the frozen potatoes and then refreeze them.
