- Cherry tomatoes – You can also halve grape tomatoes if that’s what you have on hand.
- Fresh garlic – Fresh minced garlic really elevates the flavor of this dish.
- Fresh basil – A few leaves of chopped basil really make this dish stand out.
- Olive oil – Olive oil really gives the best and most authentic Italian flavor to this dish.
- Salt and ground black pepper – These seasonings will really make the chicken breast taste like it was cooked in a restaurant.
- Italian seasoning – Typically, this is a mixture of dried herbs like oregano, basil, thyme, marjoram and rosemary.
- Chicken breast – Boneless, skinless chicken breasts are great for this recipe. You can also use boneless, skinless chicken thighs. We recommend using a meat mallet to pound the chicken breasts to even thickness to ensure even cooking.
- Mozzarella cheese – Fresh mozzarella delivers an amazing flavor if you are able to find it at your store.
- Balsamic glaze – Pick up at the store or you can make a homemade balsamic drizzle. Simply simmer balsamic vinegar on the stove top over low heat until it coats the back of a spoon. The vinegar will reduce by about half and thicken as it cools.
How To Make Bruschetta Chicken
Mix tomatoes, garlic, basil, Italian seasoning, salt, pepper, and 1 Tablespoon of olive oil to make the bruschetta mixture in a medium bowl.
Season the chicken on both sides with salt and pepper. Heat the remaining olive oil in a large skillet. Add chicken and cook for about 6 to 8 min per side until browned.
When chicken reaches an internal temperature of 165 degrees Fahrenheit, top with a slice of mozzarella. Cover with a lid and allow to melt. Remove from heat.
Top each chicken breast with bruschetta mixture and drizzle with balsamic glaze before serving.
Can I Make Bruschetta Chicken Ahead of Time?
You can definitely meal prep this dish. Store chicken and bruschetta mix separately in airtight containers in the fridge. When you are ready, heat the chicken in the oven until it reaches an internal temperature of 165 degrees Fahrenheit and then top with bruschetta and balsamic glaze to serve.
Storage and Reheating
Fridge: Store leftover bruschetta chicken in an airtight container for up to 3 days. Store leftover bruschetta mix and chicken separate if possible.
Freezer: Store leftover chicken without bruschetta mix in a freezer bag for another time. Thaw overnight in the fridge. Do not freeze bruschetta mix, it will become very soggy.
To reheat chicken, place in the oven at about 350 degrees for 10-15 minutes or until heated through. You can also reheat easily in the microwave. Add bruschetta topping and balsamic glaze to serve.

- 1 ½ cups cherry tomatoes cut in half
- 2 teaspoons garlic minced
- 3 leaves basil finely chopped
- 2 Tablespoons olive oil divided
- ½ teaspoon salt divided
- 1 teaspoon ground black pepper divided
- 1 teaspoon Italian seasoning
- 4 boneless skinless chicken breasts
- 6 slices mozzarella cheese
- ¼ cup balsamic glaze
Instructions
- In a medium size bowl, mix the cherry tomatoes, garlic, basil, Italian seasoning and half of each the salt, pepper, and 1 Tablespoon of olive oil to make the bruschetta mixture.
- Season the chicken on both sides with remaining salt and pepper. Heat the remaining 1 Tablespoon of olive oil in a large skillet on medium high heat. Add chicken to the skillet and cook for about 6 to 8 min per side until browned and internal temperature of 165 degrees Fahrenheit.
- When chicken is cooked, top each piece with a slice of mozzarella cheese. Cover with a lid and allow to melt. Remove from heat.
- Top each chicken breast with bruschetta mixture and drizzle with balsamic glaze.
