Crock Pot Beef & Vegetable Soup ~ Easy to make, loaded with hearty vegetables & delicious beef. This is one slow cooker soup you must make this winter.
Today I’m sharing one of my all-time favorite slow cooker recipes with you. I’ve had this recipe ready to post for a while, but I wanted to wait until the weather was right.

Last week we had a cold front come into Nevada and it got so chilly. I know for everyone back east 45 degrees is warm, but for this desert girl it’s freezing for me. Ha! I had to get my sweaters, gloves and Uggs out. Once that happened I knew I needed to share this recipe with you today. I’ve fallen in love with my slow cooker this past year. I was never a slow cooker lover, but I’ve tried numerous recipes – hamburger soup is another favorite – and use it all the time now.
My favorite thing to use with my slow cooker are the slow cooker bags. Have you seen them? They’re available in most grocery stores and they make clean up a breeze. You line the slow cooker with the bag, add all the ingredients, set your slow cooker to the appropriate time and walk away. Come back hours later to a delicious meal then throw the used bag away and wha-la you have a clean slow cooker already. See so easy!
What’s also easy is this soup. When I created this recipe a few months ago, Sean and I feel in love with it. I make it at least once a month and we love it every time. I love that this soup is loaded with a different variety of vegetables. You have everything from carrots, celery to green beans, potatoes and white beans. Also the meat is tender and taste great! This is the ultimate comfort soup for those chilly winter nights.
Next time you’re craving some comfort food or something to warm you up, make this recipe. It’s easy, delicious and perfect for the cold chilly months ahead of us. I have one more thing to add to this post. This is my last post on Julie’s Eats and Treats. It’s been a fun year working side by side with Julie and I can’t wait to see all of her yummy recipes this coming year. Take care everyone!!
