A fun twist on a Po’ Boy Sandwich! A quick dinner recipe that takes a toasted hoagie bun and layers it with lettuce, crunchy fish sticks and a homemade tartar sauce with a zip!

I love taking regular ingredients and making them turn into a fun new recipe for a break on the regular old dinner! For example these Fish Stick Po’ Boy Sandwiches take Gorton’s Haddock Fish Sticks, which I usually prepare on their own, and by adding a few more ingredients they are these delicious sandwiches! Still super simple, but a new item for my weekly menu rotation.
Have you ever had a Poor Boy Sandwich? I think I have, like once before. I don’t see them on a menu regularly around here, so I decided I wanted to make my own and I’m all about quick fixes and mixing things up with my recipes. That is how these Fish Stick Po’ Boy Sandwiches were born!
We grew up on fish sticks. It was that staple that Mom always had in the freezer. Apparently, she passed that down to me because I can officially say I have a few boxes Gorton’s fish sticks in my freezer right now too. I love that they have a light breading on them and flakey fish on the inside. The ratio of breading to fish is just right!
They are so handy when you need a quick dinner and you have had a busy day. My kids love them, so I’m totally sold!
Poor Boy Sandwich
In my opinion every sandwich should have a nicely toasted bun. It kind of makes the sandwich and it is so easy to do! Just butter your bun and pop it under the broiler for a few minutes. Make sure to watch it as it can burn quickly. Not that I’ve ever done that before!
There’s just something about that warm toasted bun that totally takes a regular sandwich over the top!
These Po’ Sandwiches start with a toasty bun, then shredded lettuce is piled on, crunchy Haddock Fish Sticks and topped with a homemade remoulade sauce. Don’t worry, the remoulade sauce is super easy to make and delicious!
What Ingredients Do I Need for Fish Stick Po’ Boy Sandwich?
- Gorton’s fish sticks
- Creole seasoning
- Mayonnaise
- Horseradish sauce
- Garlic powder
- Lemon juice
- Sweet relish
- Hoagie rolls
- Butter
How Do I Make a Po’ Boy Sandwich?
Fist of all it’s REALLY simple! Look. Only four steps!

Prepare fish sticks according to manufacturers directions. When you remove them from the oven give them a toss in Creole seasoning.

While fish sticks are cooking mix the remoulade sauce together. Refrigerate until ready to use.

After the fish sticks are done remove from oven and keep warm. Turn oven to broil.

Then we broil those buns! Butter inside of hoagie buns and place on baking sheet. Put in oven and broil until golden brown. Remove from oven. Layer with lettuce, fish sticks and remoulade sauce.

Fish Stick Po’ Boy Sandwich
Ingredients
- 1 Box Gorton’s fish sticks
- 1 Tbsp creole seasoning
Remoulade Sauce
- 1/2 c. mayonnaise
- 2 Tbsp horseradish sauce
- 1/2 tsp garlic powder
- 1 Tbsp lemon juice
- 1 tsp sweet relish
- 1/4 tsp creole seasoning
Sandwiches
- 4 hoagie rolls
- 4 Tbsp butter
Instructions
- Prepare Gorton’s fish sticks according to manufacturers directions. When you remove them from the oven toss with 1 Tbsp creole seasoning.
- Meanwhile in a small bowl mix the remoulade sauce together. Refrigerate until ready to use.
- After the fish sticks are done remove from oven and keep warm. Turn oven to broil.
- Butter inside of hoagie buns and place on baking sheet. Put in oven and broil until golden brown. Remove from oven. Layer with lettuce, fish sticks and remoulade sauce.
